My projects use GemBox.Document, GemBox.Spreadsheet and GemBox.PDF.
Does it make sense to install the GemBox.Bundle or stick to individual libraries?

Both options are valid, you can use GemBox.Bundle in one project and one or more individual GemBox components in another project.
Note that GemBox.Bundle just contains all GemBox components as its package dependencies, it doesn’t contain anything more than that.
